I've got a friendly arm nanopi duo2, and i'm connected to it via a functional gadgetmode console, but i'm stuck trying to get a gadget mode ethernet. (I don't want to fiddle around with the wifi chip at the moment)

if I do sudo modprobe g_ether, I get couldn't find an available UDC - added [g_ether] to list of pending drivers

you do everytime you boot the board, you just don't pay attention. When using a HDMI cable you may not see it though as it may go by before the buffer is filled. In which case you should use a UART TTL adapter to connect to it instead.

if it is in boot.scr you will need to decompile it, update it, compile it -- if it is in ArmbianEnv.txt then you can update it there and likely reboot and it should work. Worst case you can mount your SDcard in another device and revert your changes.
