I can tell North and South by the stars and the sun. I can read the time from the sun. If the Earth was flat, then how can I do that. The sun would rise and set with a huge sweeping arc around me.

In fact, if the Earth was flat there would be no sunset and sunrise from the horizon. It would appear to the side, go around you, then set to the side.
